Towards
1821, the local priest José Eusebio Colombres (later made bishop)
sowed sugar cane for the first time in his country house. He also
set up rustic wooden sugar mills moved by oxen, similar to those
that the Jesuits had been using since the 18th century. Processing
sugar cane in this primitive manner, the bishop produced sugar.
The project involving the 9th of July Park included the old country
house in its layout. What remains is the large old two-story high
house with its arcade that belonged to Colombres. Inside, part of
his furniture is preserved together with some weapons and other
period objects. Still standing outside is the old sugar mill made
of quebracho wood.
